May always brings a sense of renewal, not just because my birthday is around the corner, but also because it’s a time I usually carve out for a much-needed vacation. The magic of a Palmier comes from the layered puff pastry, which creates hundreds of delicate, buttery layers that expand and crisp up when baked. When coated with a sweet mixture, these layers caramelize, offering a satisfying crunch with every bite.   • Thawing is Key: Always follow the package directions for thawing. Typically, this involves letting it sit at room temperature for about 30-40 minutes, or overnight in the refrigerator. If it’s too cold, it will crack when unfolded. If it’s too warm, it will become sticky and difficult to handle.
  • Keep it Chilled (But Not Frozen): Puff pastry performs best when it’s cool but pliable. If your kitchen is warm or you’re working slowly, you might need to pop the pastry back into the fridge for 10-15 minutes if it starts to get too soft.
  • Lightly Flour Your Surface: A very light dusting of flour on your work surface and rolling pin will prevent sticking without making the pastry tough. Don’t overdo it!
  • Handle with Care: While relatively robust, puff pastry benefits from gentle handling to maintain its delicate layers. Avoid overworking it.

Ingredients

  • 1 sheet puff pastry, thawed according to package directions
  • 1/4 cup Musselman’s apple butter
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. On a lightly floured surface, unfold the puff pastry sheet. Evenly spread apple butter on top.
  2. In a small bowl, mix together the sugar and cinnamon. Sprinkle 1 tablespoon on top of the apple butter.
  3. Fold both short sides inward until they are touching in the center. Sprinkle another 1 tablespoon of cinnamon sugar on top. Fold one side over the other side, closing like a book. Cover and refrigerate for 30 minutes.
  4. Preheat oven to 400F. Line one baking sheet with parchment paper.
  5. Slice the dough into 3/4-inch pieces. Toss each piece in the remaining cinnamon sugar and place on the baking sheet 2 inches apart, laying them cut side up.
  6. Bake for 18-20 minutes or until puffed and golden. Cool for 2 minutes then transfer to a cooling rack to cool completely. Serve warm or at room temperature. Best eaten the day they are made but can be stored in an airtight container for up to 2 days.

Notes
