Ingredients

  • 2 tablespoons packed brown sugar
  • 2 teaspoons cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 1/2 – 3 pounds boneless pork butt (may be labeled shoulder)
  • 1 cup stout beer, such as Guinness
  • 3 garlic cloves, smashed
  • 1 small onion, chopped
  • 8 hamburger buns

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, combine the brown sugar, cumin, smoked paprika, salt, and ground black pepper. Rub this spice mixture generously on all sides of the pork butt (shoulder).
  3. Place the seasoned pork, fat side up, in an oven-safe Dutch oven or a large, heavy pot with a lid. Place the pot on the stove over medium heat. Add the Guinness beer, smashed garlic cloves, and chopped onion around the pork. Bring the liquid to a gentle boil.
