Crispy No Yeast Buffalo Chicken Pizza

Easy Thin Crust Buffalo Chicken Pizza: Quick No-Yeast Dough for Delicious Weeknight Meals

Are you craving homemade pizza but dread the long process of making traditional yeast dough? Many of us love the idea of a fresh, hot pizza straight from our own oven, yet the time commitment for dough to rise and rest often pushes us towards takeout or, dare I say it, frozen alternatives. This feeling is all too familiar for avid home cooks and bakers alike. Despite my passion for creating dishes from scratch, I confess to a secret stash of frozen pizzas in my freezer – a convenient, albeit slightly embarrassing, go-to for busy evenings.

While I’m particular about the quality of frozen pizzas I choose, opting for those with fresh ingredients, the cost can quickly add up. Homemade pizza often feels like a weekend luxury, a recipe reserved for Sundays when time is abundant. That was until I stumbled upon a revelation: no-yeast pizza dough. This game-changing discovery completely transformed my approach to weeknight meals, proving that a delicious, crispy thin-crust pizza is indeed possible without the wait.

The Magic of No-Yeast Pizza Dough: Your Weeknight Pizza Solution

The concept of no-yeast pizza dough might sound unconventional if you’re accustomed to traditional recipes, but it’s truly a culinary marvel. Traditional pizza dough relies on yeast to leaven, which requires specific activation times and a waiting period for the dough to proof. While this process develops complex flavors and textures, it’s simply not practical when you need dinner on the table in under an hour.

No-yeast dough, on the other hand, utilizes baking powder as its leavening agent. This means there’s no waiting for the dough to rise – you mix it, roll it out, and bake it! The result is a wonderfully thin, tender, and incredibly crispy crust that’s ready to be topped almost instantly. This quick preparation makes homemade pizza a realistic and exciting option for even the busiest weeknights, eliminating the need to compromise on quality or resort to less satisfying alternatives. It opens up a world of possibilities for fresh, customizable pizza creations any day of the week.

Unleash the Flavor: Why Buffalo Chicken Pizza is a Must-Try

Lately, I’ve been on a major buffalo chicken kick, incorporating that irresistible blend of spicy, tangy, and savory flavors into various dishes. From creamy buffalo chicken mac and cheese to refreshing lettuce wraps, and of course, pizza, this flavor profile never disappoints. Buffalo chicken pizza holds a special place in my heart, rooted in fond memories of shared meals with friends. We’d often order it or enthusiastically make it ourselves, always ensuring we had a generous side of ranch dressing for dipping each fiery slice.

What makes buffalo chicken pizza particularly appealing for a quick homemade meal is its inherent efficiency. Unlike many other pizza varieties that require a separate, often simmered, pizza sauce, the “sauce” for buffalo chicken pizza is integrated directly into the chicken mixture. This streamlines the preparation process significantly. You simply cook the chicken, mix in the hot sauce and ranch, prepare your speedy no-yeast dough, assemble everything, and within minutes, you’re ready to bake and enjoy a fantastic dinner. It’s a flavor powerhouse that’s surprisingly simple to execute.

Achieving the Perfect Crispy Thin Crust: Essential Tips for Success

While our no-yeast dough provides a fantastic foundation for a thin crust, achieving that coveted, satisfying crispiness requires a few key techniques. I’ve made this pizza countless times, experimenting with various elements to consistently get that perfect crunch. Here are three crucial tips to ensure your homemade thin crust pizza is incredibly crispy every time:

1. Master Your Oven with an Oven Thermometer

This might seem like a small detail, but an oven thermometer is an absolute game-changer, especially when baking thin crust pizza. Studies have shown that ovens set to the same temperature can vary by as much as 90 degrees Fahrenheit. For a truly crispy crust, high heat is non-negotiable. If your oven temperature is too low, the dough will bake slowly, resulting in a soft, chewy crust rather than a crisp one.

I personally rely on the OXO oven thermometer (affiliate link) and have learned that my oven is quite accurate up to about 425°F. However, it struggles to maintain temperatures above 450°F. To achieve a true 450°F inside, I often have to set my oven to 475°F. Knowing your oven’s true temperature is paramount for baking success; without it, your crust might never reach its full crispy potential. Don’t guess – measure!

2. Timing is Everything – Assemble Just Before Baking

Building on the importance of accurate oven temperature, the timing of your pizza assembly is equally critical. For instance, my oven takes significantly longer than the standard 15 minutes to genuinely preheat to 450°F. Since our buffalo chicken mixture is deliciously saucy, assembling the pizza too early means the dough would sit, absorbing the sauce and becoming soggy before it even hits the heat.

To prevent a dreaded soggy bottom, always wait until your oven has reached its target temperature and has had a few extra minutes to stabilize before you start topping your pizza dough. This ensures that when the pizza goes into the oven, the crust immediately begins to crisp up, creating a perfect barrier against the moist toppings and leading to a wonderfully firm and crunchy base.

3. The Art of Evenly Rolling Out the Dough

The thickness of your dough plays a huge role in the final texture of your thin crust pizza. A common mistake is rolling out the edges very thinly while leaving the center slightly thicker. This often results in a pizza with crispy edges but a softer, chewier middle – an inconsistent texture that detracts from the overall experience.

To achieve uniform crispiness, strive for an even thickness across the entire dough circle. Lightly flour your work surface and your rolling pin, then apply consistent pressure as you roll, rotating the dough frequently. Aim for a thickness similar to that of a tortilla or thin cracker. Taking a little extra time here will ensure that every bite of your pizza is as delightfully crispy as the last.

Crafting Your Buffalo Chicken Pizza: A Quick Overview

Beyond the recipe card details, understanding the flow of this recipe highlights its simplicity. First, you prepare the chicken. A quick sauté of seasoned chicken breast pieces, followed by onions and garlic, forms the flavorful base. Then, the magic happens as hot sauce and ranch dressing are stirred in, creating that signature creamy, spicy buffalo flavor. While the chicken mixture cools slightly, you’ll swiftly prepare the no-yeast dough. This involves a simple mix of dry ingredients, followed by water and olive oil, kneaded just enough to come together. Roll out your dough, brush with a little olive oil for extra crispiness, then layer with a blend of mozzarella and cheddar cheese, followed by your buffalo chicken mixture, and finally, the remaining cheese. Bake until golden and bubbly, and you’ll have a restaurant-quality pizza in no time.

Ingredients

  • 1 teaspoon vegetable oil
  • 1 large boneless skinless chicken breast, cut into 1-inch pieces
  • Salt, to taste
  • 1/2 cup sliced onion (roughly 1/2 small onion)
  • 1 garlic clove, minced
  • 2 tablespoons hot sauce
  • 2 tablespoons ranch dressing
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup shredded cheddar cheese
  • Parsley, for garnish

Pizza Dough

  • 1 cup all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup water
  • 1 tablespoon olive oil plus more for brushing

Instructions

  1. Preheat oven to 450F. Lightly grease a pizza pan with cooking spray. If using a pizza stone, place it in the oven to preheat.
  2. In a large skillet over medium heat, heat the oil. Once hot, sprinkle the chicken with salt then add to the skillet and cook for 3 minutes. Flip and cook for another 3 minutes or until the chicken is fully cooked.
  3. Add the onion and garlic. Cook 1 minute or until fragrant.
  4. Stir in the hot sauce, ranch, and onion slices. Cook another 1-2 minutes or until everything is heated through. Let cool while you make the pizza dough.
  5. For the dough: In a large bowl, mix together the flour, cornstarch, sugar, baking powder, and salt. Stir in the water and olive oil. Knead a few times directly in the bowl until the dough comes together.
  6. On a lightly floured surface, roll out the dough into a 9-inch circle. Brush with olive oil. Top with half of both cheeses, add the chicken mixture, then top with remaining cheese.
  7. Bake for 12-15 minutes or until the crust is golden brown. Wait a few minutes to cool before cutting. Top with parsley before serving.
