Blondies

  • 1/4 cup (2 ounces) unsalted butter, cut into 4 tablespoons
  • 1/2 cup creamy peanut butter
  • 3/4 cup packed brown sugar
  • 1 egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt

Cookie Dough

  • 1/4 cup (2 ounces or 4 tablespoons) unsalted butter, softened
  • 1/4 cup creamy peanut butter
  • 1/4 cup packed brown sugar
  • 1/4 cup powdered sugar
  • 3/4 cup all-purpose flour
  • 1/8 teaspoon salt
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla
  • 3/4 cup semisweet chocolate chips

For the topping

  • 1 cup peanut butter chips

Instructions

    For the blondies

    1. Preheat oven to 350F (175C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy lifting, or lightly grease the pan with cooking spray.
    2. In a large saucepan over medium heat, gently melt together the unsalted butter and creamy peanut butter until the mixture is smooth and fully combined. Remove the saucepan from the heat and whisk in the packed brown sugar vigorously; the mixture may appear grainy, which is normal. Beat in the room temperature egg and vanilla extract until the mixture is smooth and well-incorporated. Add the all-purpose flour, baking powder, and salt, then beat until all the dry ingredients are just incorporated and no streaks of flour remain. Be careful not to overmix.
    3. Evenly spread the blondie batter into the prepared 8×8 inch pan. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. A few moist crumbs are perfectly fine, but ensure there’s no wet batter. Allow the blondies to cool completely in the pan before proceeding. This step is crucial for achieving clean layers.

    For the cookie dough

    1. While the blondies are cooling, prepare the eggless peanut butter cookie dough. In a large mixing bowl, using an electric mixer, beat together the softened unsalted butter, creamy peanut butter, packed brown sugar, powdered sugar, all-purpose flour, and salt until the mixture is light, fluffy, and creamy. Allow this final topping to harden completely; you can speed this process up by placing the blondies back in the refrigerator. Before cutting the blondies into squares, let them sit at room temperature for at least 15 minutes. This ensures the topping is firm enough to cut cleanly but not so hard that it cracks.

      These triple peanut butter blondies do get quite soft at room temperature due to their rich layers, so I highly recommend storing them in an airtight container in the refrigerator for up to 1 week to maintain their texture and freshness.
