As the crisp air descends and leaves turn to fiery hues, one color invariably captures the essence of autumn: orange. From the vibrant pumpkins adorning porches to the playful spirit of Halloween and the golden carpets of fallen leaves, orange truly heralds the arrival of fall. It’s a color that promises warmth, comfort, and the cozy flavors we cherish this season.

So, when envisioning a quintessential fall dessert, a Pumpkin Tiramisu seemed like the perfect canvas. I imagined a dessert boasting a vivid pumpkin hue, a treat that would scream autumn in every spoonful. However, as often happens in the kitchen, reality sometimes paints a slightly different picture. You might be looking at the photos and thinking, “But Carla, your tiramisu isn’t orange. It’s… a beautiful, comforting brown!”

And you’d be absolutely right! While I initially hoped for that bright orange, the moment the aromatic cinnamon and warm clove joined the pumpkin purée, any illusion of a vibrant orange shade gracefully faded. The spices, while essential for that beloved fall flavor, transformed the mixture into a richer, more rustic brown – a color perhaps more fitting for a cozy autumn evening. Even my attempts at styling were limited to a solitary orange napkin, a charming but subtle nod to the season. The final touch of a decadent (and yes, also brown) Pumpkin Butter Caramel Sauce further deepened its autumnal palette. But rest assured, despite its earthy appearance, the taste is nothing short of elegant and truly embodies the spirit of fall.

For those who followed my culinary adventures back in June during #strawberryweek, you might recall the epic saga of my Strawberry Tiramisu disaster. That experience was a true test of patience and resilience! I attempted to make homemade ladyfingers not once, but twice, only to be met with frustrating failures. Then, a scavenger hunt ensued for store-bought ladyfingers and the elusive mascarpone cheese, both seemingly vanished from local grocery shelves. To top it all off, I was battling a nasty bout of sickness, making kitchen endeavors even more challenging.

Thankfully, my dad came to the rescue with a package of premade ladyfingers, saving the day and rekindling my tiramisu dreams. With half a package leftover, I vowed to revisit tiramisu when I was feeling better and more prepared. A few weeks later, upon spotting mascarpone at the store, I seized the opportunity, bringing it home with the best intentions. Little did I know, it would patiently reside in my fridge for about two months, awaiting its grand moment. Sometimes, even the best ingredients need to wait for the perfect inspiration!

The Perfect Fall Inspiration: Pumpkin Tiramisu

The stars finally aligned when Pam, our wonderful host for this week’s theme, announced the perfect culinary challenge. My mind instantly raced to the Pumpkin Tiramisu recipe I had bookmarked ages ago. Not only would it beautifully fit the autumn theme, but it also provided the perfect excuse to finally utilize those long-awaited ladyfingers and that patient block of mascarpone sitting in my refrigerator. It felt like fate, a delicious convergence of opportunity and ingredients.

Speaking of mascarpone, this was my first experience using this Italian cream cheese, and I must say, I am utterly smitten. It’s difficult to fully describe its unique qualities. Imagine the luxurious creaminess of cream cheese, but with an even more delicate, almost buttery texture and a subtle, distinctly “cheesy” undertone that is sophisticated and mild. What truly sets mascarpone apart, especially in desserts, is its inherent lack of sweetness. This characteristic makes it an invaluable ingredient, as it expertly cuts through the richness and sweetness of other components, creating a perfectly balanced flavor profile that is never cloying.

Crafting the Layers: Espresso, Maple, and Mascarpone Magic

Now, for a moment of candid honesty: how does one achieve that picture-perfect, impossibly neat tiramisu? Looking at my own creation, with a few ladyfingers playfully sliding to the right, I sometimes wonder if I’ll ever master the art of photographing tiramisu! Professional food photography can make even the simplest dish look like a masterpiece, and sometimes it makes my own efforts feel, shall we say, “rustic.” However, what my Pumpkin Tiramisu might lack in perfect geometric precision, it more than makes up for in extraordinary flavor. And that, after all, is what truly matters.

Despite any minor aesthetic imperfections, I can confidently say that I will absolutely be making this Pumpkin Tiramisu with Pumpkin Butter Caramel Sauce again and again. The magic lies in the exquisite balance of flavors. You have the comforting sweetness and warmth from the spiced pumpkin filling, beautifully offset by the subtle tang and velvety creaminess of the mascarpone topping. This exquisite Pumpkin Tiramisu features layers of espresso-soaked ladyfingers, a creamy spiced pumpkin filling, and a luscious mascarpone topping, all crowned with a homemade Pumpkin Butter Caramel Sauce. It’s the ultimate autumn dessert!

Ingredients

For the Pumpkin Tiramisu

  • 2/3 cup heavy whipping cream (divided into 1/3 cup and 1/3 cup)
  • 3 Tbsp granulated sugar
  • 1/2 cup pumpkin puree
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground clove
  • 1/4 tsp ground ginger
  • Pinch of salt
  • 4 ounces mascarpone cheese
  • 2 Tbsp powdered sugar
  • 1 Tbsp water
  • 1/2 tsp espresso powder
  • 3 Tbsp maple syrup
  • 12 ladyfingers
  • Cocoa powder for dusting

For the Homemade Caramel Sauce

  • 1/4 cup granulated sugar
  • 1/4 cup heavy whipping cream, room temperature
  • Pinch of sea salt
  • Few drops of vanilla extract
  • 1/2 cup pumpkin butter

Instructions

  1. **Prepare the Whipped Cream:** In a medium bowl, beat 1/3 cup heavy whipping cream until it just begins to thicken. Gradually add the granulated sugar and continue beating until soft peaks form (this means when you lift the beater(s) straight up, peaks will form but the tips will gently curl over). Set this aside.
  2. **Create the Spiced Pumpkin Filling:** In a separate medium bowl, combine the pumpkin puree, ground cinnamon, ground clove, ground ginger, and a pinch of salt. Gently fold in the prepared whipped cream from the previous step until thoroughly combined. Set this fragrant pumpkin mixture aside.
  3. **Make the Mascarpone Topping:** In another medium bowl, combine the mascarpone cheese, powdered sugar, and the remaining 1/3 cup heavy whipping cream. Beat these ingredients together until the mixture is thick, smooth, and spreadable. Set aside.
  4. **Prepare the Espresso-Maple Soaking Liquid:** In a small saucepan, bring the water to a boil. Remove the pan from the heat and whisk in the espresso powder and maple syrup until fully dissolved and well combined.
  5. **Assemble the Tiramisu:** Pour the espresso-maple mixture into a bowl wide enough to comfortably dip the ladyfingers. Dip 4 ladyfingers into the mixture, ensuring both sides are briefly coated (don’t over-soak, or they’ll become mushy). Arrange these soaked ladyfingers in a single row on a serving plate or in a pan (if using a larger pan, you might opt for two layers of ladyfingers, with 6 in each row). Carefully spread 1/3 of the spiced pumpkin mixture evenly over the ladyfingers. Repeat this process: dip another 4 ladyfingers, arrange them in a row, and spread another 1/3 of the pumpkin mixture on top. Finally, dip the remaining 4 ladyfingers, arrange them, and spread the last 1/3 of the pumpkin mixture. Finish by spreading the smooth mascarpone topping evenly over the entire dessert. For a final flourish, dust generously with cocoa powder. Cover the tiramisu and refrigerate for at least 8 hours, or ideally, overnight, to allow the flavors to meld and the ladyfingers to soften beautifully.
  6. **Prepare the Homemade Pumpkin Butter Caramel Sauce:** In a deep saucepan, spread the 1/4 cup granulated sugar in an even layer. Cook over medium heat, watching it very carefully without stirring, until the sugar starts to melt and turn a lovely amber color. As soon as it reaches this color, remove it from the heat. The residual heat will continue to cook the sugar, so be quick to prevent it from burning (which would result in a bitter taste). Slowly and carefully whisk in half of the room-temperature heavy whipping cream. Be extremely cautious as the mixture will bubble up vigorously. Once it settles a bit, finish whisking in the rest of the cream, then stir in the pinch of sea salt and a few drops of vanilla extract. If any sugar hardens during this process, simply place the pan back over very low heat and stir continuously until it softens and dissolves again. Strain the caramel sauce into a bowl to ensure it’s perfectly smooth. Finally, whisk in the 1/2 cup of pumpkin butter until fully incorporated. This rich, autumnal caramel sauce is best poured generously over individual servings of tiramisu just before serving. Refrigerate any leftover sauce in an airtight container.
