If you’ve never experienced Pop Rocks, they are tiny bits of candy that are infused with carbon dioxide. When they come into contact with moisture (like in your mouth or on a moist cupcake), the gas is released, creating an exhilarating crackling and popping sensation. It’s a harmless, whimsical effect that perfectly embodies the festive spirit of firecrackers, adding an unexpected and delightful sensory element to each bite. While they are incredibly fun, I admit their sudden popping still gives me a little jump sometimes! I even recall dropping some on the floor once, feeling the tiny pops underfoot – quite an amusing moment.

Baking with Pop Rocks requires a bit of strategy to ensure they maintain their signature fizz. Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon table salt
  • 3/4 cup granulated sugar
  • 1/4 cup (4 tablespoons or 2 ounces) unsalted butter, room temperature
  • 2 large egg whites, room temperature
  • 1 teaspoon almond extract
  • 2/3 cup buttermilk, room temperature
  • Red and blue food gels
  • 1 package (0.66 ounce) Pop Rocks
  • Frosting:
  • 1 + 1/2 cups powdered sugar, sifted
  • 1/2 cup (8 tablespoons or 4 ounces) unsalted butter, room temperature
  • Pinch of salt
  • 1/2 teaspoon vanilla extract
  • Red and blue food gels

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup cupcake pan with paper liners.
  2. In a small bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, using a stand mixer with the paddle attachment (or a hand mixer), beat the softened butter and granulated sugar together on medium-high speed until light and fluffy, usually 2-3 minutes.
  4. Scrape down the sides of the bowl. Add the egg whites, one at a time, beating well after each addition until fully incorporated. Mix in the almond extract until combined.
  5. Alternately beat in the dry flour mixture and the room temperature buttermilk, beginning and ending with the flour mixture. Make three additions of flour and two of buttermilk, beating until just smooth after each addition. Be careful not to overmix the batter.
  6. Divide the vanilla cupcake batter evenly into three separate bowls (approximately 2/3 cup in each bowl). Leave one bowl of batter plain (white). To the second bowl, mix in a few drops of red food gel until you achieve a vibrant red color. To the third bowl, mix in blue food gel until you have a deep blue.
  7. Layer the colored batter into each prepared cupcake liner. Start with a spoonful of blue batter, then add a spoonful of white batter, and finally top with a spoonful of red batter. Fill each liner about two-thirds full.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Let the cupcakes cool in the pan for 10 minutes before carefully transferring them to a wire rack to cool completely. They must be fully cooled before frosting.
  9. For the frosting: While the cupcakes cool, prepare the buttercream. In a medium bowl, beat together the sifted powdered sugar, softened butter, and a pinch of salt on low speed until just combined. Increase the speed to high and beat for 3-5 minutes until the frosting is creamy and light. Beat in the vanilla extract for another minute.
  10. To assemble the Firecracker Cupcakes: For the swirled frosting effect, take your piping bag. Using a small brush or a spoon, paint a streak of red food gel on one side of the inside of the piping bag, extending from the tip upwards. On the opposite side of the inside of the bag, paint a streak of blue food gel.   11. Once the cupcakes are completely cool, sprinkle a generous amount of Pop Rocks candy directly on top of each cupcake, focusing on the center. Then, pipe the vibrant red, white, and blue swirled buttercream on top.
