As the air fills with anticipation for holidays, special occasions, or even just a cozy weekend, the quest for the perfect dessert often begins. The Holiday Food Party bloggers, a collective dedicated to crafting recipes served with love, are always ready to inspire. And this recipe is a prime example of their heartwarming approach to baking. While many associate such elaborate treats with specific dates like Valentine’s Day, the truth is, desserts like these are an expression of affection that transcends any single calendar day.
Speaking of Valentine’s Day, it’s a date that often brings to mind traditional gifts and romantic gestures. For some, it might be fancy dinners or a bouquet of long-stemmed roses. But if I’m being honest, I’m not entirely convinced I’ve ever had a “Valentine” in the traditional sense. Sure, I’ve received the obligatory flowers, chocolates, and those wonderfully cheesy cards. But a classic Valentine’s date? Not really my scene. I’m not one for crowded, overpriced restaurants, especially when the best culinary experiences can be crafted right at home.
My ideal celebration of love, or any special occasion for that matter, involves creating a delicious dinner and an even more spectacular dessert for two. This is a joy I’d embrace any day of the week, not just on February 14th. And flowers? Well, my relationship with them is, let’s say, complicated. There was one memorable incident involving a carnation and a very determined feline. My mischievous cat developed an immediate obsession with consuming the petals, leading to a comical and ultimately futile attempt to hide the floral offender behind bags of potato chips atop the refrigerator, blocking all possible access. That little brat just couldn’t resist!
So, if you truly want to win my heart, forget the roses. Present me with a beautiful bouquet of cupcakes. And if you *really*, truly want to make a lasting impression, these Cherry Cheesecake Stuffed Cupcakes are the key. My long-standing obsession with cheesecake is no secret, and when it’s combined with the rich depth of chocolate and the vibrant tang of cherries, it’s simply irresistible. Chocolate, cherry, creamy cheesecake, and light whipped cream – doesn’t that sound like the epitome of a romantic and utterly delicious dessert?

The Inspiration: A Quest for Cherries
The genesis of these magnificent cupcakes dates back to July, a time when sour cherries are in their prime. My original vision was to utilize the peak season’s bounty to create homemade cherry pie filling, ensuring the freshest, most vibrant flavor. However, that particular summer brought a whirlwind of travel, and sadly, I completely missed the narrow window for cherry picking. Unlike the prolonged seasons of strawberries and peaches, the opportunity for fresh sour cherries is fleeting.
As winter approached, the idea of homemade filling seemed increasingly daunting. Fresh sour cherries become nearly impossible to find, and even frozen sour cherries proved elusive in my local stores. After a diligent search, I finally stumbled upon a can of plain sour cherries. However, the hefty price tag gave me pause. Ultimately, for the sake of convenience and budget, I opted for canned cherry pie filling. This decision, while not my initial ideal, proved to be a practical and still delicious choice, demonstrating that a fantastic dessert doesn’t always require every single component to be from scratch.

Crafting Perfection: Tips for Assembly and Timing
As you might imagine, creating these multi-layered cupcakes does require a bit of time and effort for assembly. However, the good news is that the entire process doesn’t have to be completed in a single day. This is one of the beauties of this recipe – it’s perfectly suited for make-ahead convenience, making it ideal for entertaining or when you simply want to spread out the baking joy.
Consider a two-day approach: dedicate one evening to baking the rich chocolate cupcakes and preparing the creamy no-bake cheesecake filling. Both components can then be properly stored. The following day, you can focus on the enjoyable task of stuffing the cupcakes, adding the cherry topping, and piping on the luscious whipped cream frosting. This strategic division of labor transforms what might seem like a complex baking project into a manageable and enjoyable culinary endeavor.

Serving and Storage Suggestions
Because of their creamy filling and delicate whipped cream topping, these Cherry Cheesecake Stuffed Cupcakes absolutely require refrigeration to maintain their integrity and freshness. However, a little trick can significantly enhance their flavor and texture when serving. While I advocate for keeping them chilled, I highly recommend removing them from the refrigerator approximately 30 minutes before you plan to serve them. This allows the cake portion to “thaw” slightly at room temperature, softening its texture and letting the flavors meld and become more pronounced. There’s nothing quite like the experience of a cold, stiff cake straight from the fridge; allowing it to gently warm up reveals its true deliciousness.
Of course, this suggestion is particularly pertinent during cooler winter months. If you’re enjoying these cupcakes during warmer weather, you’ll need to use your best judgment. High temperatures can cause the whipped cream frosting to melt quickly, compromising the visual appeal and texture. In such cases, keep them chilled until the last possible moment and serve them swiftly, perhaps even placing them on a chilled platter if presenting them outdoors.

Why These Cupcakes are a Showstopper
The magic of these Cherry Cheesecake Stuffed Cupcakes lies in their harmonious blend of classic dessert elements. The base is a perfectly moist and intensely chocolatey cupcake, providing a sturdy yet tender foundation. Nestled within is a rich, tangy, and impossibly smooth no-bake cheesecake filling, offering a delightful creamy contrast. Then comes the vibrant layer of cherry pie filling, adding a burst of fruity sweetness and a subtle tartness that cuts through the richness. Finally, a light, airy swirl of homemade whipped cream crowns each cupcake, completing this masterpiece with a delicate finish.
This combination isn’t just delicious; it’s a sensory experience. The visual appeal alone is enough to draw anyone in, with the vibrant red of the cherry peeking out and the elegant swirl of cream. From a textural standpoint, you get the soft cake, the creamy filling, the slight chew of the cherries, and the airy frosting – a delightful journey for your palate. Whether you’re celebrating a birthday, an anniversary, hosting a dinner party, or simply seeking a sophisticated treat for a quiet evening, these cupcakes are guaranteed to impress and leave a lasting memory.

Cherry Cheesecake Stuffed Cupcakes will win over anybody’s heart (and not just for Valentine’s Day either). Really though, you can’t beat chocolate cupcakes stuffed with cherry pie filling and no bake cheesecake.
Ingredients
- 1 cup + 2 tablespoons all purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 3/4 cup + 2 tablespoons granulated sugar
- 1/4 cup vegetable oil
- 1 egg
- 1 teaspoon vanilla
- 2/3 cup buttermilk
Filling
- 2 tablespoons granulated sugar
- 4 ounces cream cheese, softened
- 1/4 teaspoon vanilla
- 1/4 cup cherry pie filling (homemade or canned)
Whipped Cream Frosting
- 3/4 cup heavy whipping cream
- 3 tablespoons powdered sugar
- 1/2 teaspoon vanilla
Instructions
- Preheat the oven to 350F. Line a cupcake pan with 12 paper liners.
- In a medium bowl, whisk together the flour, cocoa, baking soda, and salt.
- In a large mixing bowl, beat together the sugar and oil until smooth. Beat in the egg and vanilla. Alternating between the flour and buttermilk, gradually add the flour in 3 parts and the buttermilk in 2 parts.
- Fill liners with batter. Bake 18-20 minutes or until a toothpick inserted in the middle comes out almost clean (you want a little bit of chocolate so they aren’t too dry). Cool completely.
- For the filling: In a large mixing bowl, beat together the sugar, cream cheese, and vanilla until smooth and fluffy. Set aside.
- For the frosting: In a large mixing bowl, beat the cream until it thickens. Gradually beat in the sugar and vanilla. Beat on high until stiff peaks form (when you pull the beaters straight up, peaks form and won’t fall over). Reserve 2 tablespoons. Keep the rest cold in the refrigerator.
- Cut a hole out of each cupcake, being careful not to cut through the bottom. Reserve the tops but discard the rest of the crumbs.
- Fold the reserved 2 tablespoons whipped cream into the cheesecake filling. Spoon about a tablespoon into each cupcake then spoon 2 cherries on top. Top with a reserved cupcake top. Repeat with the remaining cupcakes.
- Fill a pastry bag with the frosting. Pipe on top of each cupcake. Top with a cherry. Keep refrigerated in an airtight container.
