That’s when I stumbled upon an image of truly glorious chili cheese fries. Immediately, an intense craving hit. There was just one small problem: no potatoes in the house. As my stomach rumbled and my brain shifted into full ‘snack mode,’ a bag of popcorn kernels on the counter caught my eye. In a moment of culinary inspiration (or perhaps sheer hunger!), my mind somehow fused the concept of spicy, cheesy fries with the airy, crunchy texture of popcorn. The result? A stroke of genius, if I do say so myself!

If, however, you prefer using fresh cheese, you certainly can. Simply toss the freshly popped kernels with finely shredded cheddar cheese right before serving, similar to how I make my popular Irish Cheese and Bacon Popcorn. Just remember, fresh cheese means you’ll need to enjoy it immediately, as it doesn’t store well and refrigerated leftover popcorn with fresh cheese tends to lose its appealing texture. For maximum convenience and an equally satisfying cheesy kick, the powder truly is the way to go.

While I opted for freshly popped stovetop popcorn for this recipe, you have the flexibility to use microwave popcorn as well. Stovetop popping allows for complete control over the type of oil used and ensures the freshest, most aromatic kernels, leading to a superior texture and flavor foundation for your chili cheese creation. However, for sheer convenience, microwave popcorn works perfectly fine. Just be extra mindful of the salt content. Many microwave popcorn brands come pre-salted, so you might need to adjust or even omit the added salt in the seasoning blend to avoid an overly salty snack. Taste as you go, and remember the goal is a perfectly balanced, spicy, and cheesy treat!

Ingredients

  • 3 cups fresh air-popped popcorn, unsalted (learn how to make stovetop popcorn here)
  • 1 tablespoon melted unsalted butter or olive oil
  • 3 tablespoons cheddar cheese powder**
  • 1 1/2 teaspoons chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon cayenne

Instructions

  1. In a large bowl, toss together the popcorn and melted butter or olive oil.
  2. Immediately add cheese powder, chili powder, paprika, salt, cumin, and cayenne. Toss again to coat the popcorn. Serve immediately. Store in an airtight container for up to 2 days.

Notes
