Irresistible Homemade Rice Crispy Treat Snowballs: A Delicious Homage to a Classic Snack
Remember the collective gasp when Hostess announced its temporary closure? For many, it triggered a nostalgic panic, sending them scrambling to stock up on beloved Twinkies and Ho Hos. While I personally grew up more on Little Debbie treats and didn’t feel the same urgency, the memory highlights our deep-seated connection to comfort snacks. My dad, however, had a particular soft spot for Hostess Sno Balls – those delightful, round cakes with a creamy filling, encased in marshmallow frosting and a generous coating of coconut. Inspired by his enduring affection for this classic, I embarked on a culinary adventure to create my own version, reimagining them as these magnificent (Big) Rice Crispy Treat Snowballs.

The Sweet Allure of Homemade Nostalgia
The beauty of homemade treats lies in their ability to evoke cherished memories while offering a fresh, often healthier, twist on familiar flavors. While a commercial Sno Ball might leave one feeling a bit overwhelmed by its sweetness or artificial ingredients, crafting your own allows for a personalized touch. My goal was not just to replicate the taste but to capture the essence of that joyful, whimsical treat using simple, satisfying ingredients. These Rice Crispy Treat Snowballs aim to deliver all the chocolatey, coconutty, marshmallowy goodness without the regret, making them a truly spectacular use of your dessert calories.

Mastering the Art of Shaping Sticky, Sweet Snowballs
Confession: I honestly didn’t anticipate just how *big* these snowballs would become! What started as a modest idea quickly blossomed into substantial, satisfying spheres of deliciousness. And let me tell you, shaping warm rice crispy treats can be a surprisingly intense experience. If you’ve ever wondered if you can get first-degree burns from molten marshmallow and cereal, rest assured, the sensation is real! It’s a common culinary challenge, and one that requires a bit of strategy. The absolute key to success, and maintaining your fingerprints, is liberally coating your hands with butter. This significantly reduces the stickiness, allowing you to sculpt the mixture without it becoming an extension of your skin. I found that using a 1/2 cup measuring cup was incredibly helpful in guiding the shaping process, ensuring each snowball was relatively uniform and perfectly portioned. Remember, gentle but firm pressure is your friend here, molding the warm, pliable mixture around its delightful surprise center.

The Secret Center and Luscious Topping
To truly honor the spirit of the Sno Ball’s cream filling, I devised a clever trick: I carefully shaped the cocoa rice crispy cereal mixture around large, fluffy marshmallows. This creates a delightful, soft, and chewy core that beautifully complements the crispy exterior. Once these sweet spheres had cooled completely and set, it was time for their signature finish. I dipped the tops into melted white chocolate, allowing a generous cascade to coat each treat. The final touch, of course, was a generous sprinkle of shredded coconut, providing that iconic texture and flavor contrast. A little tip from experience: white chocolate can sometimes be temperamental when melting, occasionally seizing or becoming clumpy. For future batches, I’m keen to experiment with a creamy buttercream frosting instead, which offers a smoother application and another layer of rich flavor. However, when done right, the white chocolate provides a beautiful, firm shell that holds the coconut perfectly.

A Delicious Reaction and Enduring Appeal
The true test of any nostalgic recipe lies in the reaction of those it’s meant to delight. When I proudly presented these homemade snowballs to my parents, my dad’s face lit up with immediate recognition and excitement. He instantly knew they were ‘snowballs,’ albeit a deliciously different interpretation than the Hostess classic he remembered. The joy of seeing him enjoy them, finding the familiar comfort in this new form, was incredibly rewarding. It reaffirmed that sometimes, the best treats are those that merge tradition with a little creative innovation, proving that a homemade touch can elevate even the simplest snack into something truly special. These snowballs are not just desserts; they are edible moments of joy, perfect for sharing and creating new sweet memories.

Beyond the Bite: Customization and Serving Suggestions
These Rice Crispy Treat Snowballs are not just a delicious treat; they’re also incredibly versatile and open to creative customization. While the cocoa rice cereal, white chocolate, and coconut combination is a winning classic, don’t hesitate to experiment. Imagine swapping the white chocolate for dark chocolate for a richer, more intense flavor profile, or even milk chocolate for a sweeter, creamier finish. You could also tint the white chocolate with food coloring for festive occasions – think green for St. Patrick’s Day or pink for Valentine’s! Instead of shredded coconut, consider using sprinkles, crushed nuts, or even a drizzle of caramel or fudge sauce for an extra layer of decadence. For those who found the white chocolate melting tricky, a simple vanilla buttercream or even a chocolate ganache would make for an equally delicious and perhaps easier-to-handle coating. These snowballs are perfect for any occasion: a delightful addition to a holiday dessert platter, a fun treat for a birthday party, or simply a sweet pick-me-up during the week. Their no-bake nature makes them a fantastic project for a quick dessert fix, and they store well in an airtight container at room temperature for several days, ensuring you can enjoy that homemade nostalgia whenever a craving strikes.
Essential Tips for Rice Crispy Treat Success
Making perfect rice crispy treats, especially when shaping them into balls, comes down to a few key techniques. Firstly, work quickly once the cereal is mixed with the marshmallow. The mixture will begin to set as it cools, making it harder to shape. Secondly, butter your hands generously and frequently. Reapply butter if you notice the mixture starting to stick again. This is crucial for avoiding frustration and burns. Thirdly, for uniform snowballs, use a measuring cup as a guide, scooping roughly the same amount for each treat before shaping it around the large marshmallow. Fourthly, ensure your large marshmallows are fresh and pliable; stale marshmallows will be harder to mold around. Finally, allow adequate cooling time for the shaped treats before dipping them in chocolate. A fully cooled and set snowball will hold its shape better and prevent the chocolate from melting off. By following these simple tips, you’ll be crafting beautiful, delicious, and perfectly shaped Rice Crispy Treat Snowballs every time.

(Big) Rice Crispy Treat Snowballs
9-12 balls
Chocolate coconut snowballs using rice krispie treats, a nostalgic no-bake dessert.
Ingredients
- 2 Tablespoons unsalted butter
- 2 cups mini marshmallows
- 4 cups cocoa rice crispy cereal
- 9-12 large marshmallows*
- 12 ounces white chocolate, chopped into chunks
- 2 cups shredded coconut
Instructions
- In a large pot, melt the butter. Add the marshmallows and stir constantly until melted and smooth. Remove from the heat and stir in the cereal until everything is well-coated.
- Line a cookie sheet with parchment paper. Rub a little bit of butter onto your hands to help with the stickiness (optional). Very carefully, shape roughly 1/2 cup of cereal around one large marshmallow. Repeat until all of the cereal is gone. Let cool completely.
- In a microwave-safe bowl, microwave the white chocolate on power level 4 for 30 seconds. Keep microwaving in 15 second increments at power level 4 until the chocolate is melted and smooth. Dip the top of each snowball into the chocolate then sprinkle on some coconut (if you’re having trouble dipping, spoon the chocolate on top). Let the chocolate harden before eating.
Notes
* You will get 9-12 snowballs, depending on how tightly you pack the balls around the marshmallow.
