- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 cup (4 ounces or 8 tablespoons) unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 eggs, room temperature
- 1 1/2 cups mashed banana (roughly 3-4 medium bananas)
- 1 teaspoon vanilla extract
- 1/2 cup whole milk, room temperature
- 1 cup semisweet chocolate chips
- Double batch of Peanut Butter Cream Cheese Frosting
Instructions
- Preheat oven to 350F. Prepare two 8-inch round cake pans (1 1/2 inches deep) by lining the bottoms with parchment paper, then lightly greasing the paper and sides with cooking spray. This crucial step ensures your cake layers release perfectly.
- In a large bowl, meticulously sift together the flour, baking powder, and baking soda. Do not skip this step, as sifting helps to aerate the dry ingredients and prevents lumps, leading to a lighter, more uniform cake texture. Stir in the ground cinnamon, nutmeg, and salt until well combined.
- In a separate large mixing bowl, using an electric mixer on medium speed, beat together the softened unsalted butter, granulated sugar, and brown sugar until the mixture is light, fluffy, and well combined. This creaming process incorporates air, which is vital for a tender cake. Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next, until the mixture is smooth and emulsified. Next, beat in the mashed banana and vanilla extract until just combined. Gradually add the dry flour mixture alternately with the milk, beginning and ending with the dry ingredients. Add the flour in three additions and the milk in two additions, mixing on low speed until just combined after each addition. Be careful not to overmix! Finally, gently fold in the semisweet chocolate chips with a spatula.
- Divide the batter evenly between the two prepared cake pans. Bake for 30-35 minutes, or until a wooden toothpick inserted into the center of the cakes comes out clean. The cooking time may vary slightly depending on your oven. Once baked, cool the cakes in their pans on a wire rack for 15 minutes. After 15 minutes, carefully invert the cake pans and allow the cakes to cool completely on the wire rack. Cooling thoroughly is essential before frosting to prevent the frosting from melting.
- To assemble your magnificent cake: If the cake layers have domed tops, use a serrated knife to carefully trim some of the cake off the top until they are flat. This creates a stable base for stacking and a level finished cake. Place one cake layer on your chosen cake stand or serving plate. For easy cleanup later, slide thin strips of parchment or wax paper underneath the edges of the cake.
- Spread a generous portion of the Peanut Butter Cream Cheese Frosting over the top of the first cake layer to create a delicious filling. Carefully place the second cake layer on top. Next, apply a thin “crumb coat” layer of frosting all over the cake – this seals in any loose crumbs and creates a smooth surface for your final frosting layer. Don’t use more than half of the frosting for this step. Refrigerate the cake for 15 minutes to allow the crumb coat to set, which makes applying the final layer much easier.
- Once the crumb coat is set, retrieve the cake from the refrigerator and finish covering it with the remaining frosting, smoothing it out for a beautiful presentation. Carefully slide out the paper pieces from underneath the cake. For the best stability and firm frosting, refrigerate the cake until the frosting is firm. Store the cake covered in the refrigerator.
