While I do have a Guinness chocolate mousse recipe, that one features beer and isn’t the traditional chocolate mousse experience.

With Valentine’s Day just around the corner, I knew it was time to create and share the ultimate chocolate mousse recipe for two. I even served them in adorable heart-shaped ramekins to elevate the presentation of this ramekin dessert recipe (though these aren’t essential).

Chocolate mousse is a quintessential chocolate dessert characterized by its light and airy texture. This delightful texture is achieved by carefully folding whipped egg whites into a rich, melted chocolate mixture. It shares similarities with chocolate pudding, but boasts a less dense and heavy consistency.

The quality of the chocolate directly translates to the final flavor. Opt for a chocolate with a cocoa percentage that you enjoy – around 60-70% is a good starting point. Avoid chocolate chips as they contain stabilizers that can affect the final mousse texture.
  • Eggs: Separate the egg yolks and whites while the eggs are still cold, as this is much easier. Once separated, allow them to reach room temperature. Room temperature egg whites whip up to a greater volume. This ensures a light mousse.
  • Granulated Sugar: Sweetens the mousse and balances the bitterness of the dark chocolate.
  • Vanilla Extract: Enhances the chocolate flavor, adding depth and complexity. Use pure vanilla extract for the best results.

Here’s how to create this irresistible homemade chocolate mousse for two:

  1. Melt: Gently melt together the heavy cream and chopped chocolate using a double boiler or in the microwave in 30-second intervals, stirring in between, until smooth. Be careful not to overheat the chocolate.
  2. Whisk: Remove from the heat and whisk in the egg yolks, sugar, vanilla extract, espresso powder (if using), and salt until well combined and smooth.
  3. Beat: In a separate clean, dry bowl, beat the egg whites with an electric mixer (stand mixer or hand mixer) on medium-high speed until stiff peaks form. Stiff peaks mean that when you lift the beaters, the peaks hold their shape and do not flop over. Avoid over-beating the egg whites, as this can make them dry.
  4. Fold: Gently fold the beaten egg whites into the melted chocolate mixture in three additions. Be careful not to deflate the egg whites. Use a rubber spatula and gently cut through the center of the chocolate mixture. Then lift and fold the chocolate mixture over the egg whites. Rotate the bowl and repeat until just combined and there are no more streaks of egg white.
  5. Refrigerate: Divide the mousse evenly between two 6-ounce ramekins or small bowls. Cover with plastic wrap, pressing it gently against the surface of the mousse to prevent a skin from forming. Refrigerate for at least 4 hours, or preferably overnight, to allow the mousse to fully set and chill.

Ingredients

  • 1/2 cup heavy whipping cream, room temperature
  • 4 ounces semisweet baking chocolate, finely chopped
  • 2 large egg yolks, room temperature*
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon espresso powder (optional but makes the mousse extra chocolatey)
  • 1/8 teaspoon kosher salt
  • 2 large egg whites, room temperature*
  • Homemade whipped cream, for serving

Instructions

  1. Add about an inch of water to a medium saucepan and bring to a simmer. Turn off the heat and place a heatproof bowl over top (do not let the bottom touch the water). Add the heavy cream and chocolate, then stir with a rubber spatula until melted and smooth. This creates a double boiler. You can also use a microwave, heating in 30 second intervals and stirring in between.
  2. Remove from the heat and whisk in the egg yolks, sugar, vanilla extract, espresso powder, and salt. Set aside to cool slightly while you work on the egg whites.
  3. In a large mixing bowl on high speed (with whisk attachment if using stand mixer), beat the egg whites until stiff peaks form (when you pull the beater up, peaks will form and not fall over), about 4-5 minutes. Be careful not to overwhip.
  4. Using a rubber spatula, gently fold the whipped egg whites into the chocolate mixture in three additions until smooth and there are no more traces of egg white. Be careful to maintain the air in the egg whites.
  5. Transfer the mixture to two 6-ounce ramekins or similar bowls. Cover the surface with plastic wrap. Refrigerate at least 4 hours or until set. Serve with whipped cream and your favorite toppings.

Notes

  • *Eggs are easiest to separate into yolks and whites when cold. Separate them right after taking them out of the refrigerator, then let them sit at room temperature to warm up.
  • For an even richer mousse, try using dark chocolate instead of semisweet chocolate.
