20+ Irresistible Buttermilk Recipes: Elevate Your Cooking & Baking (Never Waste It Again!)

Recipes with buttermilk collage showing various dishes like pancakes, waffles, and cakes.
A delicious array of dishes made with buttermilk.

Have you ever found yourself with a carton of buttermilk sitting in the back of your fridge after making just one recipe? It’s a common dilemma for home cooks and bakers alike. While there are quick substitutes like adding vinegar or lemon juice to regular milk – which works perfectly for a small yellow cake – sometimes, these stand-ins simply don’t capture the true essence of real buttermilk.

For dishes where that distinctive tangy flavor and incredibly tender crumb are non-negotiable, such as fluffy waffles for two, comforting biscuits and gravy, or delightful mini Irish soda bread, nothing quite compares to genuine buttermilk. It imparts a unique richness and softness that elevates these recipes from good to extraordinary.

As someone who often crafts small-batch desserts for two, I frequently end up with a surplus of buttermilk. Finding a small pint can be a challenge; more often than not, I’m buying a whole quart, which is far more than a single recipe requires. This inevitably leads to the question: “What should I do with all this leftover buttermilk?”

Too many times, that precious carton would meet an untimely end in my fridge before being sadly discarded. But no more! I’m making a conscious effort to minimize food waste (and save money!), and you can too. That’s why I’ve curated this extensive collection of over 20 incredible recipes with buttermilk as a star ingredient, including mouth-watering options like air fryer fried chicken. If you’re ready to stop throwing away buttermilk and start transforming it into delicious creations, you’ve come to the right place. Let’s dive in!

Creamy Mint Frosting: The Ultimate Peppermint Buttercream Recipe for Cupcakes & Brownies

Mint Frosting is a delightful, smooth, and incredibly creamy buttercream, infused with the invigorating taste of peppermint extract. With its refreshingly vibrant green hue, it’s particularly perfect for festive occasions like St. Patrick’s Day, adding a pop of color and flavor to any celebration.

Smooth Mint Frosting in a bowl with a spatula, ready to be used.

For many, the crisp, cool flavor of mint chocolate chip ice cream holds a special place, often ranking as a top favorite dessert. This luscious mint frosting recipe aims to capture that beloved taste, creating a buttercream so rich and creamy it can even be piped to resemble scoops of ice cream atop your mint chocolate cupcakes. As March approaches, signaling the arrival of spring and St. Patrick’s Day festivities, the craving for all things mint-flavored becomes undeniable. It’s the perfect time to whip up homemade treats like classic Shamrock Shakes, but also to explore the versatility of this fantastic mint buttercream.

It’s worth noting that when it comes to mint, not all variations are created equal. While fresh mint has its place, this recipe celebrates the distinct, vibrant flavor of artificial peppermint extract. This choice ensures that classic “mint chocolate” taste we all know and love, steering clear of the sometimes overpowering or herbaceous notes of fresh mint. With St. Patrick’s Day just around the corner, this mint buttercream is ideal for pairing with other green delights such as mint fudge, no-bake mint pie, or as a decadent topping for chocolate desserts. Think of it as an elevated version of my popular small batch buttercream, but with the added zing of peppermint and, optionally, a beautiful green hue.

While the green food coloring isn’t strictly necessary for the flavor, it undeniably enhances the experience. There’s something wonderfully satisfying about a visually appealing dessert, and a touch of green can trick your brain into perceiving an even more intense minty freshness. This adaptable peppermint frosting is fantastic for decorating small batch chocolate cupcakes or as an irresistible layer on your favorite brownies, transforming simple baked goods into extraordinary mint chocolate treats.

The Unexpected Joy of Homemade Ice Cream, Even in Winter

It’s been quite a while since my ice cream maker saw any action. While my love for ice cream doesn’t diminish with the temperature, the motivation to churn out a fresh, frozen dessert often takes a backseat during the colder months. Picture this: you glance outside, and a thick blanket of snow covers everything, including your car. The thought of spending precious minutes digging it out while enduring biting, below-zero wind chills is enough to make anyone retreat to the warmth indoors, abandoning any plans for icy treats.

However, an unusually warm spell recently shifted my perspective. Suddenly, the craving for homemade ice cream became undeniable. Yet, many of our beloved local ice cream stands remain closed for the winter season. Of course, a quick trip to the grocery store could satisfy a basic craving, but the specific, complex flavor I yearned for simply isn’t available off the shelf. My heart was set on a decadent Chocolate Stout Pretzel Ice Cream, complete with chocolate-covered pretzels and a generous swirl of homemade caramel sauce – a truly unique and satisfying combination.

From St. Patrick’s Day Inspiration to a Frozen Masterpiece

The genesis of this extraordinary ice cream recipe dates back to last year’s St. Patrick’s Day, a time often associated with stout beer. While I was busy perfecting my chocolate stout brownies, a spark of inspiration ignited: why confine the rich, malty notes of stout to baked goods when they could elevate a frozen dessert? I instantly knew that the deep, complex flavors of stout beer, when paired with chocolate, would create an utterly “killer” ice cream. My personal preference is always for a fudgy chocolate ice cream base, and I envisioned how the stout would deepen that richness even further.

To truly complete this culinary vision, I knew it needed contrasting textures. Every bite deserved a delightful crunch. Given the classic pairing of beer and pretzels, the choice was clear. However, to ensure those pretzels maintained their integrity and delightful crispness within the creamy ice cream, I opted for chocolate-covered pretzels. This simple yet brilliant addition prevents sogginess and adds another layer of chocolatey goodness. And what better way to crown this masterpiece than with a luxurious swirl of caramel sauce? Its buttery sweetness beautifully complements the slight bitterness of the stout and the intensity of the chocolate, bringing all the elements into perfect harmony.
