  • 1/4 cup granulated sugar
  • Zest of 1 lemon
  • 1/4 cup lemon juice
  • 1/4 cup heavy cream
  • 1 tablespoon whipped cream vodka (optional)
  • 2 cups seltzer water
  • Homemade Whipped Cream (get recipe here)

Instructions

  1. In a large saucepan, whisk together the sugar, lemon zest, and lemon juice. Bring to a boil over medium heat, whisking often. This step ensures the sugar fully dissolves and infuses with the lemon flavor.
  2. Boil for another 1-2 minutes or until the sugar has fully dissolved and the mixture is slightly thickened. Keep whisking to prevent scorching.
  3. Remove the saucepan from the heat and allow the lemon syrup to cool completely to room temperature. This is crucial for maintaining the crispness of the seltzer and cream. Once cool, pour the lemon syrup through a fine mesh strainer to remove all the zest. Discard the zest, leaving a smooth, clear syrup.
  4. To assemble, add 2 tablespoons of the prepared lemon syrup and 2 tablespoons of heavy cream to the bottom of one glass. Stir gently to combine. Repeat this step with another glass, ensuring even distribution for each serving.
  5. Pour 1 cup of seltzer water into the first glass, then add the remaining 1 cup of seltzer into the second glass. If making a cocktail, now is the time to add 1 tablespoon of whipped cream vodka to each glass and stir gently. Top generously with homemade whipped cream and serve immediately for the best effervescent experience.
