- 5 tablespoons granulated sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup cake flour*
- 3 egg whites
- 1/8 teaspoon cream of tartar
- 1 pint Häagen-Dazs Tiramisu Gelato
- Powdered sugar, for dusting
- Cocoa powder, for dusting
Instructions
- Preheat oven to 350°F (175°C). Line two cookie sheets with parchment paper. On each parchment paper, draw out 2.5 inch (6.5 cm) circles, leaving some space between them. Flip the paper over so the marked side is facing the cookie sheet. This prevents pencil marks from transferring to your cookies.
- In a large mixing bowl, using an electric mixer, beat together the egg yolks and 2 tablespoons of the granulated sugar until the mixture becomes thick, pale yellow, and forms ribbons when the beaters are lifted. This usually takes about 4-5 minutes. Beat in the vanilla extract until just combined. Sift the cake flour over the egg yolk mixture; do not mix it in yet, allow it to sit on top.
- In a separate, clean large mixing bowl, beat the egg whites with clean beaters until they become foamy. Add the cream of tartar and continue beating until soft peaks form (when you lift the beater straight up, peaks will form but gently fold over). Gradually add the remaining 3 tablespoons of granulated sugar, beating continuously until stiff, glossy peaks form (the peaks will stand upright and hold their shape). Carefully fold a third of the egg whites into the egg yolk mixture until just combined. Gently fold in the remaining egg whites in two more additions, mixing only until incorporated.
