- 1/2 cup sweetened shredded coconut flakes
- Powdered sugar, for rolling (about 1/2 to 3/4 cup)
Instructions
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, using an electric mixer, beat together the softened butter, granulated sugar, and lemon zest until the mixture is light and creamy, about 2-3 minutes. Beat in the egg and lemon extract (if using) until well combined. Gradually beat in the dry flour mixture until just combined, being careful not to overmix.
